Sunday Dinner with the family turned out great! Made Stuff Shells with a chef Salad and homemade dressing! I love to see my family full and happy...it's the best part of being a chef!

Brooklyn Nets Vs Washington Wizards

GAME VS. FOOD

Went to the Barclays to see another Brooklyn Game and lets just say the food was better than the game. Don't get me wrong I love the fact that Brooklyn has a team now but I think the team needs to develop more. All in all they had a good season but the best part of the games to me was the fact that I had VIP tickets and the food was good and FREE! oooh Shout out to my boy (Jets Hat) That went to the game with me. So I went on a little adventure with my lady today and after about 2 hours of doing what she wanted to do...it was time for me to find something good to eat. Lets just say after a long discussion we decided to go to The SHAKE SHACK!

Brooklyn Nets Vs Chicago Bulls


HAPPY BIRTHDAY TO MY SPECIAL LADY!

My lady turned 26 today so I suprised her with VIP tickets to see the Nets vs. Chicago. This was her first time attending a basketball game so I wanted to make sure her first time was extra special. Happy to say that she loved every minute of her birthday and was smiling for ear to ear the entire time. Since this was our first time at the Barclays Arena.... we indulged in all of the food we could eat. Sadly, the Nets lost this game but on the upside we got a chance to enjoy some really good food.

My Famous Seafood Stew


So I make this amazing soup that everyone loves... My inspiration for making this soup was from eating Jamaican Fish Tea soup as a child. I've always loved Fish Teas soup but I wanted to make a soup that went beyond what I was use to eating. Each time I make this stew  it comes out a little bit better that the last time. I add all my favorite shell fish amd different types of fish that give my soup deep rich flavors. I love to make this stew in the winter when it's really cold out because there is nothing better than knowing that after coming in from a long day of work ...there will be a hot pot of stew waiting.

Sauteed Potatoes with spinach and squash


Sauteed Potatoes with spinach and squash 




  • 4 Medium size russet potatoes
  • 1 pound of fresh spinach 
  • 1 medium sized squash
  • 1 small yellow onion
  • 2 cloves of fresh garlic
  • 1/2 packet of accent seasoning salt
  • 1/2 teaspoon of black pepper
  • 1/2 teaspoon of adobo seasoning salt
  • 2 tablespoons of extra virgin olive oil
  • 2 tablespoons of butter
  • 1/2 cup of chicken broth 
  • 1/2 cup of vegetable broth 

Directions
In a medium sized pot place 4 potatoes for 15 minutes until potatoes are partially cooked. Do not overcook the potatoes because it is important to keep the shape of the potato when slicing and adding the potato to the other vegetables.Next remove potatoes from water and let set aside until the potatoes are cool enough for slicing. 

In a large saucepan  add the two tablespoons of butter and 2 tablespoons of olive oil along with the the onion and fresh garlic. Saute the garlic and onions until translucent. Once the onions and garlic have cooked,add potatoes, spinach, and squash. Add broth and the seasonings and mix gently to avoid breaking vegetables.
Saute until potatoes and squash are fully cooked.

 Serve and enjoy. Yield: serves 4

Seasonings and butter can be adjusted to taste. This recipe works for my family but it can easily be made with less seasoning and vegan butter to appeal to different pallets.
